Easy Peasy, Gluten Free, Guilt Free Pancakes


Shrove Tuesday is one of those days that we all look forward to every year as it offers us the rare opportunity to openly stuff our faces free of shame and judgment. However, whilst your mouth might be screaming "hell-yeah", if you're anything like me the combination of wheat, gluten and dairy that goes into making a traditional pancake batter will leave your stomach screaming "what the hell have you just put in me woman?!"


 Now, just because I have made the choice to eat the right foods for my body does not mean that I have to sacrifice such delicious treats as pancakes - no, no, no.
Enter my easy peasy pancakes.
Gluten free, dairy free, low in sugar and high in protein these pancakes are a great alternative to more traditional recipes.

To make the batter you will need:
1/2 banana
2 eggs
1 tablespoon chia seeds
3/4 - 1 tablespoon finely milled oats
(If you are also intolerant to oat gluten then substitute for an extra tablespoon of chia seeds or a tablespoon of protein powder)
Recipe makes around 6 small, thick pancakes.


Optional ingredients and toppings could include:
Fat/oil to grease the pan (I am using coconut oil)
A filling/flavouring to go in the pancake batter (I am using dark chocolate chunks)
A syrup (I am using date syrup)
Dried fruit (I am using goji berries) 



1. Add all the batter ingredients to a blender and whizz.







2. If you can control your hunger then allow the batter to stand for around half an hour before cooking - this gives the chia seed time to absorb some of the liquid and will help your pancakes stick together better when being cooked.


3. Place a frying pan on a high heat and allow your fat/oil to get good and hot.


4. Once hot enough, gently pour in two little puddles of batter - they should start to sizzle immediately, if they don't then allow a little more time for the pan to get hotter.


5. Now, scatter your desired filling evenly over your pancakes a leave for a moment to sink in. 


6. When you see the edges of your pancakes turn golden then you can go ahead and flip 'em. 
WARNING: these pancakes do not flip as well as traditional ones and so I would recommend the use of a spatula rather than attempting to do the ol' pan-toss technique. Trust me, the results are disastrous. 

Once you have made your first batch then re-grease your pan and repeat the same method until you have used up all of your batter.

Et voila!


Now smother them with your favourite toppings (guilt-free of course)...


For mine I chose creamed coconut, date syrup and dried goji berries.


Simply divine!
